Domaine du Merchien: AB  Organic status since 2012

Région:  Midi Pyrénées, Belfort du Quercy , South West France

Grape Variety: Cabernet Franc – Malbec -Tannat – Gamay – Merlot – Jurançon – Abouriou and Syrah

Age of vines: 50 years

Harvest: Machine and by hand

Soil: Calcaire

Vinification: Total de-stemming of the grape harvest; fermentation in concrete vats, maintaining the temperature of around 26° / 28° by ventilating the must regularly. Fifteen days average fermentation on the skins, vertical pneumatic pressing, free run wine and press wine are treated separately. Malolactic fermentation is left to take place naturally in the spring. Limited dosage of SO2.

Organic red wine “VAT”, 11.5% vol

The colour is deep purple. An intense nose with aromas of exotic fruits (lychee and passion fruit).

Palate: Full silky tannins, with light notes of candied fruit.

Grape variety: Cabernet Franc, Merlot , Malbec, Gamay, Tannât, Syrah.

Food pairing: Serve at 18°C with a roast lamb with Provencal herbs, sautéed pork accompanied by peppers and courgettes.

Organic red wine “CF” 13% vol

Beautiful black cherry colour. Nose of black currant fruit. Fleshy wine, with a beautiful structure, sustained tannins. Decanted half an hour before is recommended.

Grape variety: Cabernet Franc 100%

Food pairing: Serve at 18°C red meat with potatoes and duck fat / Cassoulet / Magret / blue cheese / dark chocolate cake.

Rosé Wine “Organic Rosé Blanc” 12.5% ​​vol

A peach colour. Intense nose of fresh red fruit and a floral citrus note.

Palate: Dry, lively Fruit attack.

Grape variety: Cabernet Franc 100%

Food pairing: Serve between 8°C and 12°C Charcuterie / Tapas / Salad / Grill / Sushi.
